PEPPERMINT BISCUITS
- 250 grams margarine
- 500 ml coconut
- 2 1/2 ml baking powder
- 1 slab peppermint crisp chocolate
- 250 ml castor sugar
- 500 ml cake flour
- 50 ml cocoa
- Cream margarine and sugar together.
- Add coconut and sifted flour, baking powder and cocoa.
- Mix to form a soft dough.
- Spread onto a baking sheet 33x21cm and bake in a preheated oven at 180C for 30mins.
- Remove and sprinkle grated chocolate over biscuits while still hot.
- When slightly cooled cut into squares or fingers.
