Middle Child Pizza
- 1/4 cups Olive Oil
- 1 whole Recipe For Pizza Dough
- 1/2 cups Basil Pesto
- 1 cup Finely Chopped Artichoke Hearts
- 1 cup Seeded, Finely Chopped Tomatoes
- 1/2 cups Finely Chopped Olives (either Black Or Kalamata)
- 1 cup Crumbled Feta
- 2 Tablespoons Shredded Parmesan Cheese
- 1/4 teaspoons Garlic Salt
- 1/2 teaspoons Dried Oregano Leaves
- Preheat your oven to 500F.
- Generously coat a half-sheet pan with olive oil.
- If you think its too much, youll probably need more.
- Youre trying to prevent the pizza from sticking.
- Stretch your dough to fit the pan.
- Pretty much any dough recipe will work here.
- I am particularly fond of Jim Laheys pizza recipe.
- It is easy (no kneading) and delicious.
- Smear the pesto all over the dough with your fingers.
- Sprinkle the artichokes over the top.
- They are so yummy and I heart artichokes 4 ever!
- Tomatoes are next, followed by the black olives, then the feta.
- Sprinkle the parmesan, the garlic salt, and the oregano all over the top.
- Isnt it pretty?
- Bake for 1/2 hour.
- ( If your oven is small, you might consider covering the pizza with aluminum foil for the first fifteen minutes).
- Take your masterpiece out of the oven and drizzle a little olive oil over the top.
- Transfer to a cutting board and serve with freshly grated parmesan and red pepper flakes.
