Rainy Day Goulash
- 1- 1/2 pound Ground Beef
- 1 cup Onion, Finely Diced
- 1 can Diced Tomatoes (15 Oz.)
- 1 can Rotel Tomatoes (10 Oz)
- 12 ounces, weight Cooked Elbow Macaroni
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic Powder
- 1 can Tomato Sauce (8 Oz)
- 1 can Mild Enchilada Sauce (10 Oz)
- 1 can Cream Of Mushroom Soup (10 Oz)
- 2 cups Grated Cheddar Cheese
- Brown ground meat in a large skillet with the onion.
- Drain fat.
- Stir in remaining ingredients except for cheese.
- Mix well and heat through.
- Let simmer for about 15 minutes with lid on.
- Top with cheddar cheese.
