New French Dip
- 1 lb deli or homemade roast beef
- 1 medium onion
- 1 loaf french bread
- 12 slice provolone cheese
- 2 tbsp butter
- 1 can beef consomme
- 1 cup water
- 3 tbsp vegetable oil
- Heat vegetable oil over medium heat.
- Cut whole onion into thin strands and add to vegetable oil.
- Cook onions, stirring and pulling apart occasionally until golden Brown and soft.
- Combine 1cup water with 1 can beef consomme over medium heat.
- Shred roast beef, if needed.
- Add roast beef to beef consomme and keep over medium heat.
- Cut French bread at an angle to make longer sandwiches.
- Cut 12 half inch thick slices, or thicker if you would like.
- Butter one side of each piece of bread and toast on a griddle.
- Remove roast beef from consomme and place on half the French bread slices.
- Place sauteed onions on top of roast beef.
- Break provolone cheese in half and place 4 halves total on top of onions.
- Finish it off by closing up the sandwich and use remaining consomme for dipping.
