Crunchy Pea Salad With Miso Dressing
- 14 cup water
- 2 tablespoons seasoned rice vinegar
- 2 tablespoons light yellow miso
- 2 tablespoons bottled minced ginger
- 1 12 tablespoons mirin (sweet rice wine) or 1 12 tablespoons white grape juice
- 1 tablespoon dark sesame oil
- 1 12 teaspoons fresh lemon juice
- 1 garlic clove, minced
- 1 (16 ounce) packagefrozen tiny peas, thawed
- 2 cups matchstick-cut carrots
- 1 cup diced seeded cucumber (about 1 small)
- 12 cup sliced green onion (about 4)
- 14 cup sliced almonds, toasted
- Combine first 8 ingredients in a small bowl, stirring with a whisk until blended.
- Combine peas and next 4 ingredients in a medium bowl.
- Add dressing, and toss gently.
