Sensational BBQ Vegetable Salad
- 2 tablespoons oil
- 2 zucchini, thinly sliced
- 3 Lebanese eggplants, sliced
- 1 red capsicum, cut into chunks
- 1 yellow capsicum, cut into chunks
- 2 small red onions, cut into quarters
- 250g penne pasta, cooked, drained and cooled
- 1/2 cup roughly chopped continental parsley
- 1/3 cup KRAFT Italian Dressing
- Heat the oil and chargrill in batches for 3-5 minutes or until cooked through.
- Cool.
- Toss the cooked vegetables through the pasta with the parsley and the dressing.
- Serve immediately.
