Best Beef Stew
- 14 lb maple bacon, cut into 1/2 inch pieces
- 2 large onions
- 2 shallots
- 2 cloves garlic
- 3 tablespoons flour
- 2 lbs beef chuck
- 12 cup cognac
- 3 cups beef broth
- 1 cup canned Italian tomatoes
- 1 bay leaf
- 4 sprigs thyme
- 13 cup horseradish mustard
- 2 carrots
- 2 parsnips
- 12 lb cremini mushroom
- 14 cup red wine
- Cook bacon until crisp, add onions, shallots, and garlic, cook till tender.
- Brown meat after floured.
- Combine with rest of ingredients and cook until meat is tender.
- Brown mushrooms and add with red wine to stew.
- Simmer 10 minutes and serve.
