Poor Woman's Tagine
- 3 cups water
- 12 cup brown rice
- 34 cup lentils
- 1 teaspoon salt
- 34 cup diced onion
- 34 cup diced tomato
- 2 carrots, peeled and cut into thick rounds
- 14 cup raisins (optional)
- 12 teaspoon garlic powder
- 12 teaspoon cinnamon
- 12 tablespoon dried celery flakes
- 1 tablespoon chili powder
- Preheat the oven to 300F.
- Combine all ingredients in a baking dish (I use a pyrex mixing bowl) and cover with foil.
- Bake covered for 1 hour and 30 minutes.
- Let sit covered for at least 15 minutes before eating.
- Even better the next day, after the flavors have developed a bit more.
