Taco Lasagna
- 2 lb. ground beef
- 2 (1.25 oz.) pkg. taco seasoning mix
- 4 cloves crushed garlic
- 1/2 tsp. cayenne pepper
- 1 1/2 c. water
- 1 Tbsp. cornmeal
- 18 corn tortillas
- 1 (24 oz.) jar salsa
- 1 c. sliced green onion
- 16 oz. sour cream mixed with 1 Tbsp. chili powder
- 3 c. shredded Monterey Jack
- 3 c. shredded Cheddar
- Preheat oven to 375u0b0.
- In large saucepan, cook beef until brown; drain well.
- Add taco seasoning, garlic, cayenne and water. Simmer, uncovered, for 10 minutes; set aside.
- Sprinkle cornmeal in bottom of 9 x 13-inch casserole (preferably a baking stone). Place 6 tortillas in bottom of dish, overlapping and extending edges up slightly.
