Smoked Chicken, Pumpkin and Apple Salad

  1. Place pumpkin onto a lined baking tray and bake at 220C for 10 minutes.
  2. Toss the apples in the combined oil, lemon juice and sugar until well coated.
  3. Add to the pumpkin and bake for a further 5-10 minutes until tender.
  4. Arrange the lettuce, pumpkin, apple and chicken on a serving platter.
  5. Combine the dressing and mustard then drizzle over the salad.
  6. Serve immediately.
