Masala Chai

  1. Brew the tea as usual, using 1 quart hot water and allowing to steep for 3 to 5 minutes.
  2. Strain.
  3. This may be done as far in advance as you like.
  4. Reheat the tea slowly and over low heat with the remaining ingredients.
  5. When it is very hot, strain again; taste and adjust the seasoning and serve immediately.
