Chile Seasoning for Turkey

  1. Place chiles in small bowl.
  2. Add enough hot water to cover chiles; let stand 20 min.
  3. or until softened.
  4. Place chiles and 1/2 cup of the soaking water in blender; blend until smooth.
  5. Heat dressing in small skillet on medium heat.
  6. Add onions; cook and stir 3 min.
  7. Stir in chile sauce and pepper; simmer on medium-low heat 20 min., stirring occasionally.
  8. Cool.
  9. Spread 2 Tbsp.
  10. chile mixture inside body cavity of turkey; spread 2 Tbsp.
  11. onto meat under skin.
  12. Secure skin at neck opening with wooden toothpicks.
  13. Rub remaining chile mixture all over outside of turkey.
  14. Cook as directed, basting occasionally with pan juices.
