Apricot Meringue Squares Recipe

  1. Makes: 35 squares; serves: 12 to 18
  2. You can use prepared apricot pie filling (a thick puree marketed by Solo brand) or possibly Lekvar, but not fruity pie filling, jam, or possibly preserves.

  4. Preheat the oven to 350F.
  5. 2.
  6. For the crust, in a medium bowl, cream the butter or possibly margarine and '/2 c. sugar.
  7. Beat in the egg yolks and vanilla.
  8. 3.
  9. In a medium bowl or possibly on waxed paper, stir together both flours, the baking pwdr, and baking soda.
  10. Add in to the butter mix.
  11. Beat till combined.
  12. 4.
  13. Spread the dough into an ungreased jelly roll pan (10 1/2 x 15 x 1).
  14. Spread the apricot filling on the dough.
  15. 5.
  16. In a medium bowl, using clean beaters, beat the egg whites till frothy.
  17. Gradually beat in 1/2 c. sugar till whites hold hard peaks.
  18. Spread the meringue over the apricot filling.
  19. 6.
  20. Bake 40 min or possibly till top starts to brown.
  21. Cut into 35 squares.
  22. Variation: Use prune Lekvar instead of the apricot.
