Rich & Chewy Gingersnaps
- 1 12 cups margarine
- 2 cups brown sugar (white sugar works, too!)
- 2 eggs
- 12 cup molasses
- 4 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 2 teaspoons ginger
- 2 teaspoons cloves
- Preheat oven to 375 degrees.
- Mix sugar and all wet ingredients in one bowl, and all other dry ingredients in another (so that spices, soda, flour are well blended); then combine the two.
- If desired, refrigerate dough for a couple of hours or overnight, to allow for easier handling, but this is not necessary.
- Roll into 1" balls, dip in sugar (optional!
