Vegetarian Sloppy Joes

  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion and green pepper; cook 2 to 3 minutes.
  3. Add rice, beans, spices and BBQ sauce.
  4. Simmer 10 to 15 minutes, until heated through.
  5. Serve on buns with choice of toppings.
  6. Makes 4-6 servings.
