Vegetarian Sloppy Joes
- 1 Tablespoon Olve Oil
- 1 whole Medium Onion, Chopped
- 1 whole Green Pepper, Chopped
- 3 cups Short Grain Brown Rice, Cooked
- 2 cans (16 Oz. Can) Mexican Style Pinto Beans
- 1 teaspoon Cinnamon
- 2 teaspoons Cayenne Pepper
- 2 teaspoons Cumin
- Salt And Pepper, to taste
- 3/4 cups Hickory Smoke BBQ Sauce
- 6 whole Whole Grain Buns
- Heat oil in a large skillet over medium-high heat.
- Add onion and green pepper; cook 2 to 3 minutes.
- Add rice, beans, spices and BBQ sauce.
- Simmer 10 to 15 minutes, until heated through.
- Serve on buns with choice of toppings.
- Makes 4-6 servings.
