Australian Prawns Recipe
- 1 x Piece ginger (2"), peeled and coarsely minced
- 1 lrg Onion, coarsely minced
- 1 x Red bell pepper, coarsely minced
- 4 x Ripe tomatoes, coarsely minced
- 4 c. Fish stock
- 1 Tbsp. Fish sauce (Nam pla)
- 1/4 tsp Cayenne
- 4 c. Coconut lowfat milk
- 24 x Prawn tails
- 3/4 c. Cilantro, finely chopped
- 1/2 c. Parsley, finely chopped
- Place the ginger, onion, red pepper and tomato in the food processor till smooth.
- Transfer to a heavy casserole and cook at high heat, stirring, for 3-4 min, Add in the fish stock, fish sauce and cayenne, and stir to mix well.
- Bring to a boil, turn the heat down and simmer for about 10 min.
- Add in the coconut lowfat milk and prawns and cook on high heat stirring, for about 3 min.
- Turn down to a simmer and cook another 3 min.
- Stir in the cilantro and parsley before serving.
- Taste and adjust seasonings by adding more fish sauce and cayenne.
