Curried Egg Salad

  1. Slice all the hard-boiled eggs lengthwise.
  2. Scoop out 3 yolks and set aside in a small mixing bowl.
  3. Discard the other yolks, or use for a different recipe.
  4. Chop egg whites into bite-sized pieces and place in a large mixing bowl.
  5. Add yogurt, and mustard, and mix.
  6. Add remaining ingredients to bowl and mix to combine.
  7. Serve on a slice of toasted, whole-grain bread with romaine lettuce.
