Vegan Chocolate Chip Cookies

  1. Preheat oven to 375.
  2. Create chia eggs by combining water and ground chia seeds.
  3. Stir and let sit for 10-15 minutes to create a gel.
  4. Combine dry ingredients in a large mixing bowl and mix well.
  5. Combine wet ingredients and stir well to combine.
  6. Gradually add wet ingredients to dry and mix in chocolate chips.
  7. Form into 1 T balls and bake on a greased cookie sheet for 10-12 minutes.
  8. Otherwise freeze for later cooking or eating frozen!
