Vegan Chocolate Chip Cookies
- 1 14 cups ground oatmeal
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons ground chia seeds
- 6 tablespoons water
- 12 cup applesauce
- 34 cup turbinado sugar
- 1 12 teaspoons vanilla extract
- 1 12 cups chocolate chips
- 14 cup oil (or other form of fat-I use earth balance spread)
- Preheat oven to 375.
- Create chia eggs by combining water and ground chia seeds.
- Stir and let sit for 10-15 minutes to create a gel.
- Combine dry ingredients in a large mixing bowl and mix well.
- Combine wet ingredients and stir well to combine.
- Gradually add wet ingredients to dry and mix in chocolate chips.
- Form into 1 T balls and bake on a greased cookie sheet for 10-12 minutes.
- Otherwise freeze for later cooking or eating frozen!
