Rainbow Sandwiches
- 8 oz. cream cheese, softened
- 1-1/3 tbsp. milk
- Red, green and blue food coloring
- 1 sliced sandwich loaf, day old
- Butter
- margarine, softened
- Mash cheese and milk together.
- Divide cheese into thirds Mash and tint 1/3 a pleasing pink, the next green and the next blue.
- Spread bread with butter.
- Spread 1/3 bread with pink cheese, 1/3 with green and 1/3 with blue.
- Stack together, covering with a fourth slice, buttered side down.
- Chill in a pan covered with damp tea towel until just before using.
- To serve, cut crusts from 4 slice sandwich.
- Then cut in half with hot, clean knife.
- Cut each half into 7.
- This makes 14 small oblong sandwiches for each 4 slices of bread.
- If you want them a little bigger, cut each half into 4.
- These may also be stacked with 1 more slice by using a fourth filling tinted yellow.
