Microwave Potato Cheddar Casserole Recipe
- 4 c. sliced potatoes
- 1 med. onion
- 2 tbsp. water
- 1 c. lowfat sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon curry pwdr
- 1 c. shredded sharp Cheddar cheese
- In 2-qt glass casserole, combine potatoes and onions.
- Cover with plastic wrap.
- Microwave at high power 8 to 12 min till the potatoes are tender.
- Combine lowfat sour cream, salt and curry pwdr.
- Pour mix over potatoes.
- Top with shredded cheese.
- Microwave uncovered at high power for 3 to 5 min till cheese is melted.
- Serve warm.
