Barley and Black Bean Salad
- 3 cups cooked pearl barley *
- 2 cups blacked beans, drained
- 1-1/2 cup frozen corn, thawed
- 1-1/2 cup dried tomatoes
- 1 sm. red onion
- 1 cup avocado, chopped
- 1/2 cup cilantro, chopped
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup water
- 4 tbsp. fresh lemon juice
- 1 tbsp. grated lemon peel
- 1 tbsp. vegetable oil
- 4 cloves garlic, minced
- 2 tsp. cumin
- Combine all salad ingredients in a large bowl and toss gently.
- Combine dressing ingredients in a jar; close and shake well.
- Pour over salad and toss gently.
