Roasted Pepper Salad piperies Orektiko

  1. Preheat oven to 450.
  2. Cook whole peppers on a sheet pan for 20 - 25 minutes until peppers are wilted and soft.
  3. After peppers have cooled slightly, peel away the skins and slice them in half.
  4. Scrape out seeds and remove stems.
  5. Slice into 1/2 strips.
  6. Arrange strips on a serving tray.
  7. Sprinkle with onion, vinegar, oil, parsley, and salt and pepper to taste.
  8. Chill before serving.
