Karina's Nopalito Salad
- 1 lb nopales, chopped
- 4 cups water
- 1 12 teaspoons salt
- 1 garlic clove, finely chopped
- 12 ounces cheese, grated
- 4 tomatoes, finely chopped
- cilantro, finely chopped
- In a pan, mix together the water, chopped nopal, garlic, and salt.
- Cook on stovetop over medium heat, approximately 8 minutes.
- Remove from heat and drain in a colander.
- Let cool for 15 minutes.
- In a bowl, mix the nopalitos with the tomatoes, cheese, and cilantro as desired.
- Divide into 6 portions and serve with tortillas and beans.
