Assorted Vegetables (Namool) Recipe

  1. Wash spinach well and cook in boiling salted water to wilt.
  2. Blanch in cool water.
  3. Drain, and squeeze out excess water.
  4. Cut spinach into 1-1/2 inch lengths.
  5. Add in Spinach Seasonings and mix well.
  6. Place daikon and carrot in a bowl and sprinkle with 1/4 tsp.
  7. salt.
  8. Let stand 10 min, then lightly squeeze out water.
  9. Add in daikon/carrot seasonings and mix well.
  10. Throw away roots of soybean sprouts.
  11. Wash and place sprouts into a pan with sufficient water to cover and a healthy pinch of salt.
  12. Cover and cook over medium heat for 10 min.
  13. Drain well and cold.
  14. Fold in beansprout seasonings.
  15. Drain fiddlehead.
  16. Stir fry in 1 Tbsp.
  17. sesame oil.
  18. Add in beansprout seasonings to taste.
  19. Cook down and sprinkle with grnd sesame seeds.
  20. Arrange cold vegetables in separate sections on serving dish, or possibly present in individual bowls.
