Nif's Lightened Spinach and Artichoke Dip
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 (14 ounce) can artichoke hearts, drained and halved
- 2 cups fresh spinach leaves
- 34 cup parmesan cheese, shredded
- 34 cup light cream cheese, softened
- 12 cup low-fat mayonnaise
- 12 cup light cheddar cheese, grated
- 1 dash hot pepper sauce (optional)
- Heat the oil in a small skillet over medium heat and saute garlic for 1 minute.
- Add artichokes and cook for 3 minutes, stirring frequently.
- Meanwhile in a food processor, add spinach, Parmesan, cream cheese, mayonnaise, cheddar, and hot sauce if using.
- Add garlic and artichoke mixture.
- Process all until thoroughly combined but still chunky.
- Scrape mixture into a serving bowl and serve.
- Options: Microwave dip on high for 2 minutes, until bubbling or heat in baking dish in oven for about 30 minutes at 350F.
