Black Bottom Pie
- 20 to 25 chocolate wafers, crushed
- 5 Tbsp. margarine, melted
- 4 eggs, separated
- 1 c. sugar
- 1 Tbsp. plain flour
- 2 c. milk
- 2 (1 oz.) unsweetened chocolate
- 2 tsp. vanilla
- 1 envelope gelatin
- 1/4 c. cold water
- 1/4 tsp. cream of tartar
- 1/4 c. sherry
- 1/2 pt. heavy cream
- half and half, whipped
- grated chocolate
- Preheat oven to 275u0b0.
- Mix crushed chocolate wafers and margarine.
- Press into a 10-inch pan; bake for 10 minutes.
- Cool. Make custard of egg yolks, 1/2 cup sugar, flour and milk.
- Cook in double boiler until thick.
- Melt chocolate.
- Add 1 1/2 cups custard and 1 teaspoon vanilla; spread over chocolate crust.
- Add gelatin, dissolved in cool water, to remaining warm custard.
- Beat egg whites.
- Add 1/2 cup sugar and cream of tartar.
- Fold whites into custard.
- Add the sherry.
- Spread over black bottom.
- Chill. Top with whipped cream and grated chocolate.
