Tomato Mexican Bake Recipe
- 3 c. minced fresh tomatoes
- 1/2 c. uncooked rice
- 1 med. onion, minced
- 1 med. bell pepper, minced
- 15 ounce. can chili beans
- 11 ounce. can whole corn
- 2 c. minced cooked chicken
- 3 tbsp. Mexican chicken seasoning mix
- Velveeta cheese slices
- Tomato slices
- Parsley
- Stew tomatoes, rice, onion, pepper till tender; add in seasoning mix.
- In 9 x 13 inch baking dish layer beans, corn, minced chicken, and tomato mix.
- Top with cheese and tomato slices.
- Sprinkle with parsley and bake at 350 degrees for 20 min.
