Lime-Cilantro Marinated Halibut with Arugula, Black Beans & Fruit
- 2-1/2 cups KRAFT Lime Cilantro Vinaigrette, divided
- 24 each halibut fillets (4 oz. each)
- 3 qt. papayas, small dice
- 3 qt. baby arugula
- 1-1/2 qt. avocados, small dice Target 10 ea For $10.00 thru 02/06
- 1-1/2 qt. grapefruit segments Safeway 10 ct For $10.00 thru 02/09
- 1-1/2 qt. canned black beans, rinsed
- multi-colored crisp tortilla strips
- 6 Tbsp. crumbled queso fresco
- Pour 1-1/2 cups of the vinaigrette (or 1/4 cup of the vinaigrette for trial recipe) over fish in shallow non-reactive pan; turn to coat both sides of each fillet.
- Refrigerate 30 min.
- to marinate.
- Remove fish from marinade; discard marinade.
- Refrigerate fish until ready to use.
- For each serving: Cook 1 fish fillet in nonstick skillet on medium-high heat 2 to 3 min.
- on each side or until fish flakes easily with fork.
- Combine 1/2 cup each papayas and arugula, 1/4 cup each avocados, grapefruit and beans, and 1 Tbsp.
- vinaigrette; spoon onto serving plate.
- Lean fillet against salad; drizzle with 1/2 tsp.
- vinaigrette.
- Sprinkle with a few tortilla strips and 3/4 tsp.
- queso fresco.
