Glazed Persimmon Bars Recipe
- 1 c. persimmon pulp
- 1 teaspoon soda
- 1 c. sugar
- 1 egg
- 1/2 c. oil
- 1 1/2 teaspoon lemon juice
- 1 1/2 c. flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 c. nuts
- 1 c. raisins
- 1/4 c. flour
- Add in soda to persimmon pulp.
- Set aside.
- Cream sugar, egg, oil.
- Add in lemon juice, flour, salt, cinnamon, nutmeg.
- Add in pulp and blend well.
- Add in raisins, the 1/4 c. flour, and nuts.
- Spread in 10 x 15 greased and floured pan.
- Bake for 25 min in 350 degree oven.
- Glaze with 1 c. powdered sugar and 2 teaspoon lemon juice, beaten together.
- Cut into bars.
