Sybilla Griffith'S Irish Boil Cake Bread

  1. In a large saucepan, place shortening, 2 cups water, sugar, raisins, salt and spices.
  2. Bring to a boil, boiling for 3 minutes. Let cool.
  3. Add flour and baking powder alternately to raisin mixture.
  4. Dissolve baking soda in 3 teaspoons water and add to mixture.
  5. Mix in nuts and vanilla.
  6. Pour into two 9 x 5-inch loaf pans that have been greased and floured.
  7. Bake at 325u0b0 for 1 1/2 hours.
