Sybilla Griffith'S Irish Boil Cake Bread
- 2/3 c. vegetable shortening
- 2 c. water
- 2 c. brown sugar
- 3 c. raisins
- 1 tsp. salt
- 2 tsp. cinnamon
- 1/2 tsp. mace
- 1/2 tsp. nutmeg
- 1/2 tsp. ground cloves (optional)
- 4 c. flour
- 1 tsp. baking powder
- 2 tsp. baking soda
- 3 tsp. warm water
- 1 1/2 c. walnuts, chopped
- 1 tsp. vanilla
- In a large saucepan, place shortening, 2 cups water, sugar, raisins, salt and spices.
- Bring to a boil, boiling for 3 minutes. Let cool.
- Add flour and baking powder alternately to raisin mixture.
- Dissolve baking soda in 3 teaspoons water and add to mixture.
- Mix in nuts and vanilla.
- Pour into two 9 x 5-inch loaf pans that have been greased and floured.
- Bake at 325u0b0 for 1 1/2 hours.
