Plantain Tarts

  1. In a medium saucepan, over medium-high heat, boil plantains about 15 minutes, or until tender.
  2. Drain.
  3. Place in a large bowl and mash.
  4. Stir in sugar, nutmeg, vanilla and a drop of red food coloring.
  5. Set aside to cool.
  6. Meanwhile, in a large bowl, sift flour and salt.
  7. Rub butter and lard into flour, until mixture is the consistency of sand.
  8. Add eggs and about 3 tb water to form a dough.
  9. Do not overwork dough, as this results in a tough crust.
  10. Preheat oven to 350F.
  11. Spray vegetable oil on a baking sheet and set aside.
  12. On a lightly floured surface, roll out dough.
  13. Cut out 24 3-inch circles.
  14. Place circles on prepared baking sheet.
  15. Spoon filling in center of each circle.
  16. Brush a little water around edge of each circle.
  17. Pull up sides of dough in thirds and bring up to center to form a pyramid.
  18. Pinch together.
  19. Bake for 20 to 25 minutes, until golden brown.
