Jicama Coleslaw
- 3 cups green cabbage, shredded
- 1 12 cups jicama, julienned
- 1 12 oranges, peeled and segamented
- 12 cup red pepper, julienned
- 12 cup green pepper, julienned
- 14 red onion, sliced in thin rings
- 14 cup cilantro
- 18 cup salad oil
- 1 tablespoon sugar
- 2 tablespoons rice vinegar
- 12 tablespoon sesame oil
- 1 teaspoon soy sauce
- 14 teaspoon Dijon mustard
- 14 cup peanuts, as garnish
- mix ingredients for slaw then toss in dressing.
- Garnish with peanuts.
