Thai Rice With Pineapple and Shrimp
- 1 tablespoon margarine
- 1 onion, chopped
- 2 cups white rice, cooked and cooled
- 12 cup unsweetened pineapple chunks
- 1 tablespoon soy sauce
- 12 medium serrano chili, seeded and finely chopped
- 4 ounces shrimp, peeled and deveined
- 2 tablespoons cilantro, chopped
- Melt margarine in a large skillet.
- Add onions; cook until tender, about 2 minutes.
- Add rice; cook over medium heat for 2 minutes.
- Add remaining ingredients; cook until heated through and shrimp are done, about 6 minutes more.
