Beef Gyros
- 1 Tablespoon Garlic, Minced
- 1 Tablespoon Lemon Juice
- 2 teaspoons Red Wine Vinegar
- 2 Tablespoons Olive Oil
- 1 Tablespoon Oregano
- 1/4 teaspoons Salt
- 1/2 teaspoons Ground Pepper
- 1 pound Beef Steak Tips, Cut Into Bite Size Pieces
- 2 whole Tomatoes, Diced
- 1/4 cups Red Onion, Thinly Sliced
- 1/4 cups Feta Cheese Crumbles
- 4 whole Pita Bread
- 1 cup Cucumber, Peeled, Diced
- 1 cup Greek Yogurt, Plain
- 3 Tablespoons Fresh Dill
- 1 Tablespoon Lemon Juice
- 2 teaspoons Garlic, Minced
- 1 dash Salt
- 1 dash Ground Pepper
- In a bowl, add garlic, lemon juice, red wine vinegar, olive oil, oregano, salt and pepper and mix until combined.
- Add meat into a zip top bag or bowl, and pour marinade over the beef.
- Refrigerate for 1 hour up to 4 hours.
- Set grill to medium low heat, you can place meat on a skewer or place directly onto grill grates.
- Cook each side for about 4 minutes then remove it from the grill to a clean plate.
- Let the meat rest for 5 minutes.
- Evenly divide the meat onto pita shells, top with tomatoes, onions and feta cheese and serve with tzatziki sauce.
- For the tzatziki sauce: In a food processor or blender, add the cucumber and half of the yogurt and process until well blended.
- Add mixture into a bowl and stir in remaining yogurt, dill, lemon juice, garlic salt and pepper.
- Add additional salt, if needed.
- Refrigerate until ready to use.
