Classic Chocolate Wafer Roll

  1. In a large mixing bowl, whip the cream with an electric mixer until soft peaks form.
  2. Add the vanilla and continue to whip until peaks are stiff.
  3. Spread 11/2 tsp.
  4. of the whipped cream onto each wafer.
  5. Stack them one on top of the other into about a 14-inch tower.
  6. Lay the stack carefully on its side on a serving platter to make a log.
  7. Frost with the remaining whipped cream and refrigerate at least 4 hours or overnight
  8. Before serving, garnish with chocolate shavings, if you like.
  9. Cut diagonally into slices; store any leftovers in the refrigerator.
