Simmered Sardines with Ginger

  1. Cut off the head of sardines from the gill area.
  2. Chop the fish in half.
  3. Push the guts out with chopsticks.
  4. Rinse the chopped sardines well with water.
  5. Julienne the ginger.
  6. Put the seasonings and sardines in a pot and sprinkle the ginger on top.
  7. Bring to a boil over high heat.
  8. When it comes to a boil, turn down to medium-low heat.
  9. Skim off any scum.
  10. Simmer until the liquid in the pot has evaporated.
  11. Serve on a plate, and it's done.
