Simmered Sardines with Ginger
- 12 Sardines (10-12 cm)
- 1 knob Ginger
- 2 and 1/2 tablespoons Soy sauce
- 1 and 1/2 tablespoons Sugar
- 1 tbsp Mirin
- 1 tbsp Sake
- 150 ml Water
- Cut off the head of sardines from the gill area.
- Chop the fish in half.
- Push the guts out with chopsticks.
- Rinse the chopped sardines well with water.
- Julienne the ginger.
- Put the seasonings and sardines in a pot and sprinkle the ginger on top.
- Bring to a boil over high heat.
- When it comes to a boil, turn down to medium-low heat.
- Skim off any scum.
- Simmer until the liquid in the pot has evaporated.
- Serve on a plate, and it's done.
