Zesty Potato Skins

  1. Heat oven to 375F.
  2. Cut potatoes lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells.
  3. Reserve centers for another use.
  4. Place shells, cut-sides up, on baking sheet; brush insides of shells lightly with oil.
  5. Sprinkle with cheese.
  6. Bake 20 min.
  7. or until golden brown.
  8. Top with remaining ingredients.
