Northern China Steamed Egg Custard

  1. Heat the oil in a small skillet.
  2. Add the meat, scallions and soy sauce and stir-fry for 2 minutes.
  3. Whisk the eggs and broth together.
  4. Place the meat mixture into a microwave safe bowl.
  5. Pour the egg/broth over the meat mixture.
  6. Cover and microwave on high for 5 minutes.
  7. If not firm, microwave for additional 30 seconds.
