Northern China Steamed Egg Custard
- 1 tablespoon oil
- 12 cup ground beef or 12 cup pork, tightly packed
- 3 tablespoons chopped scallions
- 2 teaspoons soy sauce
- 4 eggs, beaten
- 1 12 cups clear broth
- Heat the oil in a small skillet.
- Add the meat, scallions and soy sauce and stir-fry for 2 minutes.
- Whisk the eggs and broth together.
- Place the meat mixture into a microwave safe bowl.
- Pour the egg/broth over the meat mixture.
- Cover and microwave on high for 5 minutes.
- If not firm, microwave for additional 30 seconds.
