Not Quite Sauerkraut

  1. Slice Cabbage.
  2. Finely Chop Onion.
  3. Finely Crush Garlic Cloves.
  4. Chop Bacon into small pieces.
  5. Fry the Onion and Garlic (do not brown)
  6. Add the chopped Bacon
  7. Saute gently until Onions and garlic and bacon are cooked.
  8. Add Cabbage and stir all ingredients together
  9. Add Salt and Pepper.
  10. Add the vinegar and stir.
  11. Add chicken stock.
  12. Cook slowly in a covered pan for 20 -25 minutes stirring occasionally.
  13. Allow to stand for 10 minutes before serving.
