Fresh Apple Cake
- 1 cup cooking oil
- 1 12 cups white sugar
- 12 cup brown sugar
- 12 cup plain yogurt or 12 cup sour cream
- 3 12 cups flour
- 2 eggs
- 2 teaspoons baking soda
- 1 tablespoon cinnamon
- 1 teaspoon vanilla
- 12 teaspoon salt
- 3 cups chopped fresh baking apples, peeled
- 1 cup chopped nuts (optional)
- 1 cup brown sugar (for caramel glaze)
- 12 cup butter (for caramel glaze)
- 1 teaspoon vanilla
- 14 cup cream (for caramel glaze) or 14 cup evaporated milk (for caramel glaze)
- Preheat oven to 350 degrees.
- Grease an oblong 13-by-9-inch pan.
- Combine cooking oil and sugar; blend well.
- Beat eggs well.
- Add beaten, yogurt and vanilla to oil and sugar mix; bet well.
- Sift flour, cinnamon, salt and baking soda together.
- Combine wet and dry ingredients; mix well.
- Fold in apples and nuts, if using.
- Spread batter in baking pan, and cook 500-60 minutes, until toothpick comes out clean.
- For Caramel glaze, place butter and sugar in microwave; melt together on high for 1 minute; blend well.
- Add cream or evaporated milk to butter-sugar mixture and microwave on high to a full boil for 1 minute.
- Add vanilla to glaze mixture.
- Spead glaze evenly on warm cake.
