Amanda's vegan white bean and kale soup

  1. Add oil to a pot over med heat.
  2. Add onions and garlic till translucent then add carrots and potatoes.
  3. Cook for 15mins stir occasionally.
  4. Add vegetable stock, water and spices, let simmer for about 40 mins with the lid on.
  5. Add white beans and kale and let cook for another 20 mins.
  6. Add creamer and parsley at the last 5 mins.

vegetable both, water, canellini beans, garlic, white onion, handful of baby carrots, kale, parsley, paprika, cayenne pepper, soy creamer, red pepper, olive oil, salt
