Flax Seed Cloverleaf Rolls

  1. In large bowl, combine 1 cup all-purpose flour, whole wheat flour, ground flaxseed, undissolved yeast, and salt.
  2. Heat water, milk, honey, and butter until very warm (120* to 130*F).
  3. Gradually add to the flour mixture.
  4. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
  5. Add egg and 1 / 2 cup flour; beat 2 minutes at high speed.
  6. Stir in enough remaining flour to make a soft dough.
  7. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes.
  8. Cover; let rest 10 minutes.
  9. Divide dough into 16 equal pieces.
  10. Divide each again into 3 equal pieces; roll into balls.
  11. Place 3 balls in each section of greased 2 1/2" muffin pan cups.
  12. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour.
  13. Bake at 350*F for 15 to 20 minutes or until done.
  14. Remove from pan; cool on wire rack.
  15. Brush with melted butter.
  16. Enjoy!
