Brad's baked butternut squash
- 1 lg butternut squash
- 1 tsp olive oil, extra virgin
- 1 stick of unsalted butter. softened
- 1/4 cup light brown sugar.
- 1 tsp each, ground cinnamon, ground ginger
- Cut squash in half lengthwise
- Remove the guts and seeds.
- Place in a shallow baking dish.
- Brush with oil.
- Bake at 350 for around 45 minutes.
- Remove when fork easily inserts into the center
- Mix the rest of the ingredients in a bowl until well combined.
- When squash is done, top with butter mix and let melt.
- Enjoy.
