Bread With Bean Tapenade Recipe

  1. In a medium saucepan, heat the beans with the butter just to cook slightly and soften.
  2. Add in approximately 2 to 3 Tbsp.
  3. of Italian vinaigrette and salt and pepper to taste.
  4. Either mash by hand or possibly in a food processor, pulse till mashed and well blended.
  5. Set aside.
  6. If you are using a plain white loaf of bread, trim the crusts off, cut into triangles.
  7. Then brush with extra virgin olive oil, sprinkle a little salt and pepper on top.
  8. Then place on a cookie sheet, and place in a 275 degree oven, under the broiler and toast till just golden brown.
  9. If you're using a free form white loaf of bread, slice it approximately 1/4-inch thick and into approximately 3-inch rounds and follow the instructions for the plain white loaf above.
  10. Apply 1 to 2 Tbsp.
  11. of Bean Tapenade.
  12. Optional garnish, minced scallions.
  13. This recipe yields 4 servings as an accompaniment.
