Gruyere, Apricot Jam, and Toasted Walnut Panini

  1. Preheat oven to 350F.
  2. Place walnuts on baking sheet, and bake 8 to 10 minutes, or until fragrant.
  3. Cool, and finely chop.
  4. Preheat panini maker.
  5. Spread 4 slices bread with 1 teaspoons jam each.
  6. Sprinkle walnuts on top of jam, and top each with 1 slice Gruyere.
  7. Cover with remaining bread.
  8. Place sandwiches in panini maker, and bake 2 to 4 minutes, or until bread is golden brown and cheese has melted.
  9. Slice each sandwich into 4 wedges, and serve warm.
