Beet And Red Cabbage Slaw

  1. Peel beets and grate on a box grater into a bowl.
  2. Shred cabbage and add to the beets.
  3. Heat vegetable oil in a skillet until hot.
  4. Add caraway seeds and toast until fragrant, about 1 minute.
  5. Toss the vegetables with the caraway oil and cider vinegar.
  6. Season with salt and pepper.
  7. Sprinkle with parsley leaves.
