Oven Fried Catfish With Crunchy Cornmeal Crust
- 2 catfish fillets
- 4 tsp. vegetable oil
- 1/2 c. all-purpose flour
- 1 egg white, beaten until foamy
- 1/2 c. yellow cornmeal
- 1/2 tsp. salt (optional)
- 1/4 tsp. ground red pepper, cayenne
- fresh lemon wedges
- Heat oven to 400u0b0.
- Using a nonstick baking pan, brush the oil over the surface and set aside.
- Place flour on wax paper.
- Beat the egg white in a shallow bowl.
- Combine cornmeal, salt and red pepper on second sheet of wax paper.
- Dip the fish in flour; shake off excess.
- Dip fish in egg white; shake excess.
- Roll fish in cornmeal to coat and place on the baking pan.
- Repeat with other fish.
- Bake until bottoms of fish are browned and you can hear the fish sizzling.
- Turn fish over and bake about 5 minutes more.
- Serve with lemon wedges.
- Serves 2.
