Grilled Chicken Sausage Skewers
- 1 whole Yellow Bell Pepper, Cut In Chunks
- 2 whole Links Pre-cooked Chicken Sausage, Cut Into 1 Inch Segments (any Flavor)
- 1/4 whole Red Onion, Cut In Chunks
- 1/2 cups Cherry Tomatoes
- 1 Tablespoon Olive Oil
- 4 pieces Wooden Skewers, Soaked In Water For At Least 15 Minutes (so They Don't Burn)

- Toss the bell pepper, sausage, onion and tomatoes in a bowl with the olive oil.
- Season with salt and pepper to taste.

- Thread onto skewers, alternating the sausage and vegetables.
- 3.
- Preheat the grill or grill pan to medium.
- Grill the skewers until the vegetables are slightly softened and the sausage is charred, about 12-14 minutes.
- Brush some olive oil on the skewers if needed during the cooking time.
- Serve with rice or whatever side dish you like.
- I stirred some lemon juice and fresh herbs into leftover white riceit was delicious!
