Caramel Mocha Cheesecake Recipe

  1. To make crust; stir together crushed cookies & melted butter in a small bowl, till well-combined.
  2. Press crumb mix proportionately into bottom of a 9" springform pan.
  3. In a large bowl, combine cream cheese, brown sugar & cornstarch.
  4. Beat with mixer till smooth.
  5. Add in Large eggs & egg yolk one at a time, beating well after each addition.
  6. Stir in lowfat sour cream & vanilla.
  7. Stir together instant coffee & warm water; set aside.
  8. Place 3/4 c. cream cheese mix in a small bowl.
  9. Add in dissolved coffee.
  10. Stir in sugar.
  11. Stir choc.
  12. chips & corn syrup into remaining cheese mix.
  13. Pour 1/2 of choc.
  14. mix over crust.
  15. Spoon 1/2 of coffee mix over choc.
  16. mix.
  17. Pour remaining choc.
  18. mix over coffee mix.
  19. Spoon on remaining coffee mix.
  20. Swirl a knife handle through filling to create a marbling effect.
  21. Bake at 350d.
  22. 15 minutes.
  23. Lower temp.
  24. to 225d.
  25. & bake 1 hr & 10 minutes.
  26. longer or possibly till center no longer looks wet.
  27. Remove cake from the oven & run a knife around inside edge of the pan.
  28. Turn oven off.
  29. Return cake to oven for 30 minutes.
  30. Refrigerateuncovered overnight.
