Mussels with Saffron, Guajillo Chiles, and Beer

  1. Saute red onion, tomato, and garlic in olive oil until soft and translucent.
  2. Add guajillo chile, mussels, and beer.
  3. Steam for 10 minutes.
  4. Discard any unopened mussels.
  5. Serve in a shallow bowl.
